Fairmont Pacific Rim‘s pop-up patio is back on Thursday, June 1 for six weeks and this year it will introduce Vancouver to a first-of-its-kind concept – a culinary talent-show bringing together some of Vancouver’s most celebrated Michelin Guide chefs.
Each week, a new featured chef and restaurant will design a summer-inspired dish that will be available for four days only. Together with home chef, Hector Laguna of Botanist, the line-up includes Gus Stieffenhofer-Brandson (Published on Main), Lý Nguyen and Vincent Nguyen (Anh & Chi), Andrea Carlson (Burdock & Co), Lee Cooper (L’Abattoir), and Michael Zafirian (Bacaro).
Fairmont Pacific Rim’s new patio concept is giving an to immersive experience of the city using dishes rooted in the heritage of each chef’s innovative cooking style. This is the latest program in Fairmont Pacific Rim’s ongoing mission to celebrate, showcase and support artistry in all forms
The official summer schedule will kick off on Thursday, June 1, and will run through Sunday, August 27. For every feature chef dish sold, a portion of proceeds will be donated to the BC Hospitality Foundation.

August 24th – 27th: Bacaro | Chef Michael Zafirian
Along with the weekly rotation of guest chef dishes, Executive Chef Damon Campbell’s food truck will also have a summer menu perfect for outdoor dining and of course, no shortage of summer cocktails like G&T’s and Spritzes, craft beers, local and international wines.
Don’t forget to check out the live music on Fridays and Saturdays until 8pm and 6pm Thursdays and Sundays. Seating on the Pac Rim Patio Pop-Up is available on a first come first serve basis and weather dependent.
